The Wine Master’s Dinner

Before leaving Mexico, Chef Justin and Winemaster Randy Ullom created a one-of-a-kind dining experience.  The Wine Master’s Dinner at the El Dorado Royale, a Spa resort by Karisma, showcased Justin’s talents and Randy’s wine expertise. Our executive chef and winemaster worked together to create a menu paired to our fantastic wines.

Cooking in the El Dorado Royale’s culinary theater, Fuentes, and surrounded by four large screens broadcasting what he was doing, Chef Justin created a five-course menu that included Tsar Nicolai California Caviar, slow roasted filet of beef and braised oxtail, and red wine pasta with lamb sausages. Randy paired each dish with some of our favorite wines, including Avant Chardonnay, Grand Reserve Chardonnay, and Stature, the pinnacle of our portfolio.
